Homemade Ice Cream Sandwiches

"God's Gift-Nature"
Ravi Sathasivam

When the beautiful morning comes
The rays of rising sun kiss her
When the garden of nature open its heart
The garden of flowers hugs her to welcome
When the trees dance to tune of wind
The birds singing to the nature's choir
When the gentleness of nature is filled pleasure
Then the earth get wet with weather
When the nature forgets its vastness
Then the God shows her how big her place on earth
Let us thank God for his creation and given us
eyes to see lovely gift - Nature

GARDEN UPDATE
Watered early but it stayed hot from last night. Pears are coming along and so far, the birds are leaving them alone.

My rhubarb is hanging in there, but not so happy in this heat. On the other hand, my amaryllis are ecstatic in the greenhouse.

GARDEN GIGGLE

They grow up so quickly.

Giant fiberglass peppers, that is.

I remember the day I picked him up at the giant chili pepper nursery... he was so.... peppery. I may have gotten a few looks pushing him around town, but love for your children...or...vegetables, can't be swayed by strangers' judgements. Some said he had a face only a mother could love. I always said he didn't have a face.

By the time he was in his teen years though, things began to change. He was no longer the cute baby pepper I raised. He began to withdraw from me, and I started getting calls from school. Missing class, standing up to teachers (which I think was metaphorical since he doesn't have legs), it seemed that no matter what I did it would get worse and worse.

Once he got a license, I started not seeing him as much. He would come home at odd hours of the night, covered in booze and drugs. Later I would find out he was cruising for lady peppers, and having passionate pepper love- all in the bench seat of MY car, no less! As years when on, bad habits began to turn into a way of life. I would come home day after day and find the liquor cabinet raided and empty. I would cry and plead with him to stop, but he would just scoff and keep drinking. He's grown too big at this point. I can't stop him. I'm afraid I have to release him to the wild, like one of those pet alligators that grow too big and people let go in a pond (later eating everyone there).

I must warn you, he may destroy or badly influence your family. Your children. Your life. But then again, at least he's not destroying mine.

GARDEN GOODIES~SHARE OUR GARDEN RECIPE #0056 HOMEMADE ICE CREAM SANDWICHES
In honor of National Ice Cream Sandwich Day, we offer this great homemade ice cream sandwich recipe. Make your own flavor combinations with this easy recipe! Try green mint sandwiches, or a dairy-free version, or use frozen yogurt instead. Why not make vanilla cake with that awesome lemon cookie ice cream? The possibilities are endless.

You Will Need (For the Chocolate Cake Version)
(1/2) cup unsalted butter, melted
(1/2) cup sugar
(1) large egg
(1) teaspoon pure vanilla extract
(1/2) cup all purpose flour
(1/4) cup unsweetened cocoa powder
(1/4) teaspoon salt
(4) cups (950 ml) Ice Cream slightly softened
10 x 15 inch rimmed baking sheet
Parchment paper
Instructions
Preheat oven to 350 degrees F and place rack in center of oven.

Use the parchment paper in a 10 x 15 inch baking pan. Chop up your butter and microwave it for 30 seconds to a minute. In a large bowl, whisk together the melted butter and sugar.Whisk in the egg and vanilla extract.Add the flour, cocoa powder, and salt and stir until combined and smooth.Spread the batter evenly in the prepared pan. This is made easier by use of a spatula.

Bake for about 10 minutes turning the pan around halfway through cooking, so one side doesn't get more brown than the other. The cake is done when it is dry to the touch and the edges just begin to pull away from the sides of the pan. Remove from oven and place on a wire rack to cool.

Gently lift the cake onto a cutting board. With a serrated knife, cut the cake in half crosswise Place one half of the cake, top side down, on a large piece of plastic wrap.Spread with the softened ice cream, smoothing with a spatula. EDITOR'S NOTE: You do not want the ice cream to be too softened, otherwise it will be a gooey mess and you will have to start all over. Top with the remaining half of cake, top side up.Wrap tightly in plastic wrap.Place in the freezer until firm, about two hours or overnight if you have a will made of steel.

When the sandwiches have set up, remove the freezer, unwrap, and with a serrated knife or or pizza cutter, cut into rectangles or squares. Or get a cookie cutter and cut them into fun shapes!
