GARDEN GOODIES~SHARE OUR GARDEN RECIPE #0076 CUTEST CHEESE MICE
The cutest factor is off the charts on this cute dish! For the skinny-minded, you could substitute neufcatel cheese for less fat. It is sometimes sold as Low Fat Cream Cheese. These would be perfect for a potluck, slumber party or as an hors d'oeuvre appetizer.
You Will Need:
(1) 8oz pkg cream cheese, softened
(2) cups finely shredded Pepper Jack Cheese (8 oz)
(1 1/4) cups finely chopped smoked almonds
(16) julienne carrots (from a 10 oz bag)
(32) sliced almonds, toasted (2 tablespoons)(Editor's Note: To toast sliced almonds, sprinkle in ungreased heavy skillet. Cook over medium heat 5 to 7 minutes, stirring frequently until nuts begin to brown and then stirring constantly until nuts are light brown.)
Instructions:
Mix cheeses in a bowl until blended. Place smoked almonds on small plate. For each mouse, shape 2 tablespoons cheese mixture into an egg shape; roll in smoked almonds.
For tail, insert 1 carrot strip into the wide end of each mouse. For ears, insert 2 sliced almonds, pointed side up, into the narrow end. Cover with plastic wrap and refrigerate at least 2 hours or until firm.
