GARDEN UPDATE
Hope you had a happy 4th! We did, having the sisters over for a fun lunch where we had rainbow in a glass for dessert! We also tried grilling watermelon and melon, with tasty results!
After yesterday's exhausting efforts, I managed to finsh 30 jars of apricot jams, including some versions with melon, kiwi and such.
It was very humid today, unusual here and not appreciated. I feel for those poor people in the Midwest, where their a/c is out and it is 90% humidity and 100 degrees!

If you ever wanted a show stopper dessert with little work and big results, this is it!
Red Jello

Maraschino Cherries with a stem
CLEAR small wine demi-glass or individual dessert bowl, large shot glasses or small martini glass
Instructions:
(Editor's Note: To maximize ease, we used pre-made jello. For four servings in a small size serving dish, you will need one small individual container of jello ( like the type you would put in a lunchbag). To make this dessert sugar-free, you will need to make the boxed jello, as we could not find all the colors sugar-free we needed in a tub)
First we will be using only three colors. The coolest thing about this dessert is that the light refracts against the clear glass to make the rainbow. So although you SEE red, orange, yellow, green and blue, there are only the primary colors-red, yellow and blue.
Next add the yellow layer, spooning carefully over the blue layer. Your goal is to have it sit smoothly on top of the blue layer without blending into the blue. Surprisingly, you will see the green layer right away if you have done it right. Add your maraschino cherry with the stem straight up. You can cut the bottom of the cherry so that it sits flat and stands up straight. Let these two layers set up for about an hour.
Last, add the red layer. Spoon the jello (it is helpful if you let it slide in in a big glop all at once). It should slide around the cherry and cover it, with the stem standing straight up. Let the dessert sit overnight in the fridge. Serve your amazing creation to great delight of your guests!
