DID YOU KNOW...?
Today is Moon Day! Moon Day commemorates the day man first walked on the moon in 1969.

The Apollo Space program, begun by President John F. Kennedy, was created to put the first man on the moon. Apollo 11 fulfilled that dream, carrying astronauts Neil Armstrong, Michael Collins, and Edwin Aldrin, Jr. What an amazing and historic event it was!

On July 16, 1969, Apollo 11 was launched from Cape Kennedy Space Center atop a huge Saturn V rocket. On July 20, 1969, the Lunar Module, nicknamed the "Eagle", touched down on the surface of the moon at Tranquility Base. Upon landing, Apollo 11 Commander Neil Armstrong reported "The Eagle Has Landed". A few hours later, Neil Armstrong, stepped off of the Eagle's ladder, placed one foot upon the moon's surface and proclaimed: "That's one small step for a man, one giant leap for mankind".

GARDEN UPDATE
 Had some major errands to do first thing this morning so didn't get to watering til after 4pm...it was 90F and unpleasant. I guess that will show me!


The apples on the Fall branch of our apple tree are starting to look really yellow and get a slight red glow...probably will pick them the first week of August or sooner.

GARDEN GOODIES~SHARE OUR GARDEN RECIPE #0048 CROCKPOT COCONUT ALMOND CAKE
Yes, you can make an amazing cake in the crockpot! This one is especially yummy and moist.




You Will Need:

(2) boxes white cake mix
the ingredients the box tells you to use (butter, oil, eggs, etc.)-use the quantity the box tells you to
(1) can of coconut milk
(1) tsp.almond extract
(2) T powdered sugar
sweetened shredded coconut
(1) tub cream cheese frosting

Instructions:

Follow the directions on the box for the amount of eggs and oil used. Instead of using milk or water for the liquid, use the coconut milk. Make sure to shake the can really well, to mix the cream.
Add 1 tsp of almond extract to the batter.Save the rest of the can of coconut milk, we're going to use it later.

Using a round 4qt crockpot, spray your crockpot with cooking spray, and pour in batter. Cover and cook on high for 2-5 hours, or until a toothpick comes out clean.

When the cake is finished, mix 1/2 cup of the reserved coconut milk with 2 T of powdered sugar. Poke holes in the hot cake with a skewer and pour the sweetened coconut milk over the top of the cake. Let cool to room temperature, then refrigerate for about an hour. Spread cream cheese frosting and sprinkle some coconut on top. You can serve the cake right out of the crockpot!
